Green Pasta Bake
Ingredients
- 1 head broccoli
- 1 zucchini
- handful fresh basil
- 1 cloves garlic
- 2 spring onions
- 4 tbsp olive oil
- 1 cup coconut mik
- 2 cups mozzarella cheese
- 6 cups pasta
- salt and pepper
Instructions
- In a food processor add 1 head of broccoli, 1 zucchini, handful of fresh basil, 1 clove of garlic, 2 spring onions and 4 tablespoons of olive oil and blitz until almost smooth. 2. Then add 1 cup of coconut milk, 2 cups of grated cheese (we used mozzarella) and a generous sprinkle of salt and pepper and blitz for another 30 seconds, until all blended.
- Boil 6 cups of pasta. Once cooked move into a mixing bowl and pour in the green sauce and mix together. Pour into a baking dish and bake covered for 45-60 minutes at 180 degrees celsius.
