Haloumi Red Rice Salad

Ingredients
- 1 cup red rice
- 1/3 cup of finely chopped spring onions
- 1/3 cup of finely chopped coriander
- 1/3 cup of roasted slithered almonds and pepitas with salt
- 1 block of haloumi (180gram)
- Olive oil
- Salt and pepper
- 4 cups of veggie stock
- 1 cup of diced boiled green beans
Steps
- In a saucepan add 1 cup of red rice with 4 cups or vegetable stock, let it simmer covered for 40 minutes. Once the timer goes off, strain the rice and let it cool down in a mixing bowl.
- Use the same pot to boil the green beans for 4 minutes. Once cooked chop the beans finely and add to the mixing bowl.
- Finely chop the spring onions and fresh coriander and add to the mixing bowl.
- Using a fry pan add the pepitas and slithered almonds with a generous pinch of salt. Once the almonds become golden colour, remove from heat and let it cool down before adding them to the mixing bowl.
- Add a tablespoon of olive in the fry pan and place the haloumi frying each side. Once cooled down, dice it and add it to the mixing bowl.
- Add 3 tablespoons of olive oil to the mixing bowl.
- Add a generous amount of salt and pepper to the mixing bowl.
- Optional to add some lemon zest.
- Give it a good mix and serve.
