Anzac Cookies
Crisp, chewy Anzac cookies with oats, coconut, maple syrup, and a hint of currants.

Ingredients
- 1 cup rolled oats
- 3/4 cup plain flour
- 1/2 cup desiccated coconut
- 1/2 cup maple syrup
- 1/2 cup sunflower oil
- 1.5 tbsp currants (or sultanas)
- 2 tbsp boiling water
- 1/2 teaspoon baking soda
Steps
- In a mixing bowl add all the ingredients and mix well.
- Roll into balls, using a fork gently flatten on a lined baking tray.
- Bake for 20 minutes at 175 degrees celsius (or until golden brown).
