Anzac Cookies

Crisp, chewy Anzac cookies with oats, coconut, maple syrup, and a hint of currants.

Ingredients

  • 1 cup rolled oats
  • 3/4 cup plain flour
  • 1/2 cup desiccated coconut
  • 1/2 cup maple syrup
  • 1/2 cup sunflower oil
  • 1.5 tbsp currants (or sultanas)
  • 2 tbsp boiling water
  • 1/2 teaspoon baking soda

Steps

  1. In a mixing bowl add all the ingredients and mix well.
  2. Roll into balls, using a fork gently flatten on a lined baking tray.
  3. Bake for 20 minutes at 175 degrees celsius (or until golden brown).
