Beyond Basic Meatballs
Savory meatballs with a rich tomato sauce, infused with aromatic spices and veggies.

Ingredients
- 1 brown onion
- 2 tbsp olive oil
- 1.4 ltr passata
- pinch salt & pepper
- 1.5 cups water or stock
- 2 tbsp dried oregano
- 1 kg minced beef
- 2 carrots
- 2 cups frozen peas
- 1 tsp ground cumin
- 3 tsp sweet paprika
Steps
- In a large pot add olive oil and a diced brown onion.
- Once onions are golden brown add passata sauce, water/stock, salt & pepper and oregano. The key is to cook this on low for an extended period, letting the flavours infuse and develop.
- In a food processor add carrots and peas and pulse until smooth. Add minced beef, cumin and sweet paprika. If you don't have an egg intolerance you can add 2 eggs here too. Blitz until smooth.
- With your hands roll the mixture into balls and add to the tomato sauce pot. Place lid on-top and let it simmer on low for 30-40 minutes.
- Serve the meatballs with pasta.
