Beyond Basic Meatballs

Savory meatballs with a rich tomato sauce, infused with aromatic spices and veggies.

Ingredients

  • 1 brown onion
  • 2 tbsp olive oil
  • 1.4 ltr passata
  • pinch salt & pepper
  • 1.5 cups water or stock
  • 2 tbsp dried oregano
  • 1 kg minced beef
  • 2 carrots
  • 2 cups frozen peas
  • 1 tsp ground cumin
  • 3 tsp sweet paprika

Steps

  1. In a large pot add olive oil and a diced brown onion.
  2. Once onions are golden brown add passata sauce, water/stock, salt & pepper and oregano. The key is to cook this on low for an extended period, letting the flavours infuse and develop.
  3. In a food processor add carrots and peas and pulse until smooth. Add minced beef, cumin and sweet paprika. If you don't have an egg intolerance you can add 2 eggs here too. Blitz until smooth.
  4. With your hands roll the mixture into balls and add to the tomato sauce pot. Place lid on-top and let it simmer on low for 30-40 minutes.
  5. Serve the meatballs with pasta.
