Ginger Salmon Patties

Crisp ginger-infused salmon patties with potato, coriander, and cornflake crumbs for a savory bite.

Ingredients

  • 1 large potato (1 cup)
  • 1 tbsp fresh coriander
  • 1 tbsp chives
  • 1 tspn ground coriander
  • 1 tspn fresh ginger
  • 1/2 cup tinned salmon
  • 2 cup cornflake crumbs

Steps

  1. Boil 1 large potato (cube the potato before placing it into the water). Once soft drain and set aside.
  2. In a mixing bowl add 1 tablespoon of finely chopped coriander, 1 tablespoon of finely chopped chives, 1 teaspoon ground coriander, 1 teaspoon grated ginger, 1/2 cup of tinned salmon, 1 cup of cooked potatoes. Use a hand mixer and blitz together (more so the tinned salmon).
  3. Form into balls and roll into corn flake crumbs.
  4. Shallow pan fry each side until golden brown.
