Green Pasta Bake

A vibrant, nutrient-packed pasta bake with broccoli, zucchini, basil, garlic, and a creamy coconut milk sauce, topped with melty mozzarella.

Ingredients

  • 1 head broccoli
  • 1 zucchini
  • handful fresh basil
  • 1 cloves garlic
  • 2 spring onions
  • 4 tbsp olive oil
  • 1 cup coconut mik
  • 2 cups mozzarella cheese
  • 6 cups pasta
  • salt and pepper

Steps

  1. In a food processor add 1 head of broccoli, 1 zucchini, handful of fresh basil, 1 clove of garlic, 2 spring onions and 4 tablespoons of olive oil and blitz until almost smooth. 2. Then add 1 cup of coconut milk, 2 cups of grated cheese (we used mozzarella) and a generous sprinkle of salt and pepper and blitz for another 30 seconds, until all blended.
  2. Boil 6 cups of pasta. Once cooked move into a mixing bowl and pour in the green sauce and mix together. Pour into a baking dish and bake covered for 45-60 minutes at 180 degrees celsius.
