Ginger Chicken Satay Skewers
Ingredients
- 1 kg chicken tenderloins
- 4 tbsp crunchy peanut butter
- 2 tbsp maple syrup
- 4 tbsp soy sauce
- 1 tbsp lemon juice
- 1 tbsp fish sauce
- 1 tbsp grated fresh ginger
- 1/2 tbsp lemon zest
- 1/2 cup boiled water
- bamboo skewers
Instructions
- In a mixing bowl add all the above ingredients (not the skewers). Mix well. Let it marinate in the fridge for at-least an hour (marinating overnight would be ideal).
- Place 1 – 2 tenderloins on a skewer then place the skewers on a lined baking dish in the oven. Use the grilling and fan force setting on your oven (200 degrees celsius). 6 minutes each side. I serve with sliced cucumbers and coriander (cilantro) on a bed of steamed rice.
