Ingredients

  • 3 potatoes
  • 1 brown onion
  • 4 tbsp olive oil
  • 1 tbsp ground cumin
  • 1 tbsp ground coriander
  • 1/2 tbsp ground turmeric
  • 1/2 cup frozen peas
  • 3 sheets puff pastry
  • salt and pepper

Steps

  1. Boil 3 cubed potato (skin). Cook until almost soft.
  2. In a saucepan add 4 tablespoons of olive oil, 1 diced brown onion, 1 tablespoon of ground cumin, 1 tablespoon of ground coriander and 1/2 tablespoon of ground turmeric. Mix together.
  3. Once onions start to sweat and become golden add 1 cubed zucchini and 1/2 cup of frozen peas. Mix until the zucchini becomes almost soft. Once potatoes are ready add into saucepan. Give it a good mix and get the flavours fusing together. Add salt and pepper (optional).
  4. Place the mixture in the puff pastry sheet then roll into logs. Bake for 30 minutes (or until golden brown) at 180 degrees celsius.
