Salmon & Green Pesto Pasta

Ingredients
- 1 broccoli
- 6 brussel sprouts
- 1/2 cup frozen peas
- 1 clove garlic
- handful fresh basil
- 4 cups pasta
- 2 salmon fillets
- salt and pepper
- 1 tsp ground coriander
Steps
- In a food processor add 1 raw broccoli, 6 brussels sprouts, 1/2 cup of frozen peas and a hand full of fresh basil. Blitz until it has formed into a granulated texture.
- In a seperate pot boil a 4 cups of pasta.
- In a saucepan add 4 tablespoons of olive oil, crushed garlic and add 2 cubed salmon fillets (or thickly sliced) salmon fillet. Add a sprinkle of salt and pepper and a pinch of ground coriander on top. Cook each side for 1 minute.
- Add the green mix with the salmon and let it cook for 5 minutes. Once pasta is cooked add pasta to green mix. Ta da! Easy and super yum!
